Well hello there!
It has been rather damp here in our village today…the threatening clouds have hung around all day and have finally dumped the wet stuff well and truely on us!
We have had a wonderfully creative weekend, we have designed some new button jewellery.
(These will be hopefully debuting at the Stafford Cottage Fashion Show next Friday- and then be available online afterwards)
It has been a rather special few days for one half of our team.
It was Shani’s Birthday 🙂
(We need no excuse for creative sessions full of laughter, paint, buttons and cake….)
Shani is a super inspiring lady to be around.
She’s constantly full of ideas, practical advice and a warm smile or two.
I never see her more happy than when she is creating, teaching, and learning new things.
Shani is one special lady. A firm friend indeed, and there is no better way to celebrate than a birthday inspired inspiration post!
A definate must for every fashionista cupcake lover…the ultimate in edible and inspirational accessories!

Handmade dreams are Made in Minch
Well, our usual Friday morning M-i-M crafting routine got off to an “interesting” start, with Shani making a return trip to pickup forgotton photographs, and Jen…………well, having a culinary catastrophe, shall we say.
Great intentions and Grand ideas, soon caught up with us.
Picture the scene if you will. A chirpy Shani returning to find a mute jen pointing in sadness at a mangled marble sponge. After deciding it tasted quite delicious, Shani came the rescue, found some chocolate, fruit and custard and voila…. our Rescued Trifle Triumph!
We’ve been busy bees today, sorting orders, photographing, and making.
We started a Made in Minch Scrapbook, to have on our stall when we are out and about (along side our usual look book and evidence of previous products)
and for lunch? Pesto Gnocchi 🙂

Here is today’s Pancake road tested by Shani 🙂
2-3 pancakes per person (depending on how greedy/hungry your feeling)
2 ripe pears, peeled, cored and cut into pieces (keep aside and toss in a little lime juice to prevent browning)
Juice and zest of 1 lime
1 tbsp light brown sugar
half tbsp butter or margerine
1 tbsp masarla wine or sherry
1 Melt the butter in a shallow pan on medium heat
2 Toss the pears in the butter until they start to warm through
3 Sprinkle in the sugar and stir through gently, avoid letting the pear pieces from over softening or breaking
4 Add the remaining lime juice and zest
5 Leaving the juice in the pan, divide the pears between the pancakes and fold them into a triangle with the pears tucked inside
6 Put the pancakes back into the pan to warm through and soak up some of the juice
7 Take the pancakes out and put into serving dishes
8 Reduce the pan juices a little until syrupy and then pour over the pancakes.
9 Serve warm with cream or icecream

What a fab idea for a real life pancake party, don’t you think?
You know, Sometimes you just can’t go wrong with a classic?.
Not too much tinkering, not much fuss,
just good old fashioned deliciousness!
Fish Crispy pancakes
1 can tuna, crained and flaked
2 medium sized potatoes, peeled, cut into large dice and boiled until soft enough to mash
1/2 tbsp oil
1 medium onion, diced
1 clove of garlic, finely chopped
tbsp fresh coriander leaves, roughly chopped
1tsp cumin seeds
1tsp ground turmeric
Juice and zest of 1 lime
breadcrumbs for coating (I made my own by whizzing 3 slices of bread in the foodprocessor)
1 egg, beaten with a little water
1 Fry the onions until translucent in a pan with the oil
2 Add the garlic and cook for 3-4 minutes
3 Add the cumin seeds and tumeric powder
4 Tip the onion mixture into a bowl and add the tuna and potato, mash together with a fork
5 Add the lime and season with salt
6 Mix through the coriander
7 Divide the mixture into six equal portions
8 Put the beaten egg and the breadcrumbs in separate shallow bowls
9 Put a portion of filling in the middle of a pancake and shape the filling until in is a rough rectangle
10 Fold the edge of the pancake closest to you over the filling, then fold each side in, now roll the far side towards you so you have formed a parcel. Do this with all 6 pancakes.
11 Dip each pancake parcel in egg, coat thoroughly and then place in breadcrumb bowl and coat with the crumbs. Pat off any excess crumbs.
12 Heat a frying pan with a little oil and fry the parcels on a medium heat until they are golden brown on each side.
Tip: Serve with a little mango chutney and a crisp salad. If you like things with a little heat, add one finely chopped green chillie to the fish mixture.

Lets embrace today, turn up the radio with a suitable song…. and away we go!
125g (4 oz) plain flour
85g (3 oz) wholemeal flour
1/4 teaspoon salt
2 1/2 teaspoons baking powder
2 tablespoons caster sugar
335ml (12 fl oz) buttermilk
2 small ripe bananas, finely chopped

Some of Jen’s dearest friends are leaving to get married in South Africa and we are going out for a farewell dinner tonight.
In honour of them, how amazing would cake made out of pancakes be?
You are right. It would be pretty Awesome.
Shani’s American pancake breakfast
100ml buttermilk or plain yoghurt
100 ml milk
250g self raising flour
1/2 tsp salt
1 tsp sugar
1tbsp butter or margerine
2 rashers ofgrilled bacon per person
maple syrup to serve
1 Beat the egg and then thoroughly mix in the buttermilk and milk
2 Add the salt and sugar
3 Gradually beat in the flour until it is thoroughly combined. The mixture is thicker than normal pancake batter – more of a thick double cream consistency.
4 Leave the batter in a cool place to rest for at least 15 minutes. You should see that the batter has thickened a little more and small bubbles are rising to the surface
5 Put the oil and butter into a frying pan and heat to a medium heat, carefully pour the oil off into a bowl (you will need a pastry brush or some kitchen towel to wipe oil onto the pan from this bowl after each batch of pancakes is made)
6 Pour a tablespoon of batter onto the frying pan. You should get 3-4 pancakes in the pan at a go, depending on the pan’s size. Don’t pour them too close together as they spread a little
7 The pancakes will start to puff up and bubbles with rise to the surface. At this point carefully flip them with a spatula. The top should be a nice golden brown
8 Keep each batch of pancakes warm in the oven, along witht the bacon
9 Serve the pancakes with the bacon. If you want to be really American, pour some maple syrup over the pancakes too!
Tip: These pancakes are also really good with some plain yoghurt and a nice seasonal fruit compote

We are so proud and pleased to say that rather exciting things have been happening in MadeinMinch world.
We have welcomed a beautiful baby boy into our Made in Minch family!
It has been an emotional and busy time, so as for my pledge?
Well, we might have to adapt that slightly.
We’ll have to say a “Pancake Party for 7 days” which is still a week, Technically!

I’ll be enjoying my cinnamon pancakes as my ‘after Zumba’ treat! Not so healthy but scrummy, exactly what is needed after an energetic hour long session!

CINNAMON PANCAKES WITH FRUIT COMPOTE AND MAPLE SYRUP
140g self-raising flour
1 tsp ground cinnamon
3 tbsp muscovado sugar or brown sugar
1 large egg
1 tsp vanilla extract
2 tbsp melted butter , plus extra for frying
TO MAKE COMPOTE
1 large cooking apple ,
a handful of cherries,
a few blackberries,
6 spoons of sugar,
dash of mixed spice,
